These avocado muffins are the ultimate healthy sweat treat! SO delicious and super-fast to make in three steps and one bowl. They are, gluten free, diary free, sugar free only sweetened with dates. They are so filling and have an incredible moist texture that never becomes dry or boring. Their natural green colour just looks amazing!
You can eat the muffins all day. Have them for breakfast with Greek yoghurt, Skyr or a green smoothie. Have them as an in between meal with coffee or tea or enjoy them as a dessert with coconut cream, ice-cream or top them with an icing.
INGREDIENTS
(10 -12 pcs)
3 avocados
10 Medjoul dates
3 eggs
1 tsp vanilla
1 tsp baking powder
150 g dark chocolate chopped (min. 70%)
40 g chopped walnuts
A pinch of salt
How to Make Them
- Mix avocados and dates into a smooth texture with blender or food processor
- Whip eggs, spices and baking powder into the avocado/dough
- Stir in the chopped chocolate and walnuts
- Put the dough in 10 muffin cups
- Bake for 25-30 minutes at 175C
- Cool and decorate with what you like. I used chocolate, walnuts and pistachio nuts
So easy peasy!!
How to Eat Them
Enjoy the muffins same day if you have guests or put them in the fridge for at least three days. For me they never last long. They are so irresistible that I normally eat a couple a day. One for breakfast and another as a snack in the afternoon.
When I make them I always serve them to whomever comes by or bring a couple to my friends. They love them and the muffins always surprise because of the avocado and no-sugar.
They are quite filling, so as dessert they should accompany a lighter main meal. I like them best when they are completely cooled down. Actually, they are really good directly from the fridge.
